上楼下搬来了我的法餐宝典:Larousse Gastronomique
里面有几种做法。
但是这个准备工作太复杂了,如果是野生的,得先饿上10天,才能排除所有毒素,或者得喂thyme,才能去毒。
菜的名称有这几个,都是经典的:
Snails a la bourguignonne
snail broth
snails a la poulette
snails grilled a la mode du languedoc (这个最简单,我给你抄上哈)
arrange some shelled snails on a grid(grill). prepare a fire of vine shoots; as soon as the embers form a light ash, place the grid on top, sprinkle the snails with salt, pepper, thyme and crushed fennel and grill. meanwhile, cook some diced fatty bacon in a frying pan until soft. tip the cooked snails into a dish and baste with the sizzling bacon fat. serve immediately with farmhouse bread and red wine. |
